Soft touch has to do with a certain percentage of your moves being 'quick hits'. Basically tapping a hit button...I'm not sure what percentage it is...but it's something like if 60-70 percents of your hits are regular hits and not 'hard hits' (L1 and Hit Button) then you get Soft Touch...and the opposite is Hard Hitter where most of your hits are 'hard hits' and you actually get a bonus for that.
