I'm assuming you can do Tag Teams with player one and player two. The reason I ask is simply because there are some fighters I wish to just test out against somebody who can't fight back to see their moves and submissions and such but every time I pick a survival mode it (from what I can see) doesn't give you the option of picking a second player to face instead of the computer.

You don't go to Survival. You go to the one selection after Story Mode, but before Survival. Hang on one moment. *grabs manual* It's called Battle.
