So the goal to establish my gimmick which is kind of "I'm going to out-wrestle your ass in 27 different ways IN THE RING and nowhere else". But I found out that it's pretty damn hard to make it an ertertaining gimmick so I guess I'll need your help guys ... please?

Do skits that show you're a real athlete and disprove the theory that wrestling is fake. Do skits like you thwarting a bank robbery, winning a bar fight, etc. with your skills...all events that people would say "that won't win a fight", but you do. That way you come off as legit, a badass, and entertaining.
