You could start out with anything you want, but I'd suggest taking a look at the '94 and '95 Super J Cups.

Super J-Cup '94 is usually the standard answer.  But try this: pick one guy who you've already seen in American wrestling and liked, like Muta, Liger, Foley, Jericho, or whoever, and then get a "Best Of" comp of their stuff in Japan, and see who you liked on THAT tape and work your way forward from there.
