What do you think was the most surprise finish to a MMA fight ever? I'd go with Gilbert Yvel vs Gary Goodridge. That kick by Yvel was great.

That's a classic. A few that came to mind for me:

 

Royce Gracie choking out Dan Severn at UFC 4. Even for Royce, beating Severn seemed like too tall an order. Great ending as Royce slowly cinches in the triangle and you see Severn getting more and more alarmed with the situation.

 

Newton armbarring Pele at Pride 19. I was shocked Newton was even conscious after the VICIOUS knee to the head he took. Man. This fight was great.

 

Dan Henderson KOing Renzo.. it just came out of nowhere.
