You're thinking too concretely. "I couldn't care less" literally means that it is impossible to care less, but that is rarely, if ever, the case when someone says that. If they didn't know about it, they would care less. If they care enough to say they couldn't care less, there must be some modicum of caring there. In those things you pointed out, "I could care less" indicates that you don't care very much. Whether it is literally impossible to care any less is immaterial, as the message is the same.
