You want good sushi restaurants, then you need to go to Las Vegas. Since all the super high rollers are of Asian descent, there's some world-class stuff in that category. Mikado at The Mirage and Shintaro at Bellagio (that one is expensive as all hell though) are excellent, Hamayuki or whatever it's called at Caesars Palace isn't bad (it can get crowded when the Celine Dion show ends and a horde of people crowd in though), Ah Sin at Paris is about the same but without the Celine crowd. The best bang for your buck though is probably Little Budha at the Palms.
