I thought it was a reference to the finger that would be used traditionally to pull a bow or (later) fire a rifle, and that as a form of sick pleasure some soldiers would cut off the middle finger of prisoners, and show them THEIR middle finger as a way of mocking them not being able to fire weapons "like a real man" anymore...
