I remember a fun Roddy Piper vs Shawn Michaels match on WWF TV before Wrestlemania 8.

 

Chris Benoit vs Steve Austin - 5/28/01 (The one on Raw. Doesn't get talked about as much as 5/31 because of the shitty finish, but the match is very good before that finish)

I mentioned that Michaels/Piper match at theotherarena.com awhile ago.

It was a fun, intense 7 minute match. I'm pretty sure it was on a "Road to Wrestlemania VIII" special or something.

Two that I remember off the top of my head:

 

Nunzio vs. Crash Holly from Velocity in January '03. Can't remember the exact date...I'm pretty sure it was a week or two after their Smackdown match from the same month.

 

Ultimo Dragon vs. Villano IV from WCW Pro. The only thing I remember about the timeframe is that Dragon was the TV Champion at the time the match aired (who knows when it was taped).
