Chinese cuisine has a drunken chicken, but it's done differently (I think it's steamed) from the fast food bourbon chicken. Bourbon chicken (at Chinese fast food counters) is BBQ chicken with some bourbon flavour to it. So, yeah, I'd say that bourbon chicken is Cajun cuisine.
