I know Mike Brady's wife was dead. I don't think they ever explained what happened to Carol's husband

Didn't they say on one of the Brady Movies that Carol's husband died?

 

Sherwood Schwartz did both the series and movies so I would take that as being the answer.

In a Very Brady Sequel- Carol's husband was presumed dead until he came back.

 

My TV book lists Carol as being a widow

But the guy that came back was an imposter, just to clarify.
