Re: the greatest football team, at least that I've seen in my lifetime, holding off this year's team until the season conclusion, I too would have to go with either '95 Nebraska or '96 Florida
'95 Nebraska fattened up early on bad teams, but beat three teams that finished 10-2 (KSU, KU and CU) and of course, laid the huge smackdown on the then-also-undefeated fun'n'gun Gators at the end of the season. Their avg margin of victory was nearly 40 points a game, with their closest being a 14 pt win over Washington State.
'96 Florida also had it's bevy of bad teams on the schedule, but beat three very strong teams that finished 10-2 (UT, 'Bama and LSU) as well as a good 8-4 Auburn team, thus they were considered to have had the toughest schedule in football. They did lose to then-undefeated FSU in a very close game, but became one of the few one-loss champ teams to avenge their lone loss when they killed FSU in the rematch, thus closing the circle.
Those are my two. When you look into past championship teams, it's amazing how many of them had some of the worst (i.e. easiest) possible schedules you could ask for (see also: '84 BYU)
