I know what you mean. Every time I play, some asshole keeps picking Luigi Circuit over and over again. It wouldn't be as bad if it wasn't the most boring, luck-dependent track in the entire game.

I picked it up last night. Haven't bothered with online yet, but I did win 12 in a row today from the Flower to the Special cups. I was a happy camper.
