I 2nd the Ben Harper cover of "Strawberry Fields Forever"

 

In fact, pick up the I Am Sam soundtrack, nothing but Beatles covers.

 

Eddie Vedder doing "You've Got to Hide Your Love Away"

 

Todd Rundgren doing "Rain" is good too

I'd just like to add two instrumentals which make my list. They were both on a Beatles tribute album which came out a few years ago.

 

Jeff Beck - A Day In The Life. The guitar sounds so amazing in it.

Vanessa Mae - Because. She did really well with it.

 

That same album also has Celine Dion doing Here, There And Everywhere which is, to this date, the best song she has ever done (except for maybe Think Twice).

Oh, and does anyone have any opinions on Phish's live covers of several Beatles songs? I've never heard any of them, but apparently some of 'em are pretty good.

Like said earlier, I'm kind of a Beatles hater, so I really didn't care for their versions, but Phish covered the entire White Album as a Halloween "costume" one year, and continued covering Day in the Life for a while afterwards. (they might have kept doing While My Guitar Gently Weeps, too, but a lot of my Phish concert memories are a bit, ahem, hazy.)

Peter Frampton's covers of The Long and Winding Road & Come Together. I thought both of them were off the chain. But since it came from a soundtrack of one of the shit movies of all time, no one paid attention to them. Im starting to think im the only one that did..hee

ah yes, Gov't Mule's covers of "She Said, She Said >> Tomorrow Never Knows jam" are quite incredible.

The Mule have also torn up "I Want You (She's So Heavy)"

 

and then there is Mike Portnoy's "Yellow Mustard Custard" thing :)

Most of the I am Sam soundtrack is fantastic (much better than the movie). But all members of the band that covers "revolution" really need to be shot, in the head, with a gun.

Phish has covered the entire white album on oct. 31, 1994. the only beatles songs still in they're catalog frequently are a day in the life, wmggw, and cry baby cry.
