What can you cook?

So, we had a food folder, but it sucked, so it died. Then we had that "What are you eating right now" thread, but I guess everyone has gone on hunger strike, so it's nearly dead.

 

Hence the reason for this thread: What are some things that you can cook the shit out of? Meals that, were you to have a restaurant, would be featured. What would people say to their friends? "Man, if you want ___, you've got to go to ___'s"

 

So, I figure I'll start things off.

 

I can make, so I'm told by friends and family, pretty kick ass ribs, beef or pork. Fudge is no problem for me. Standard barbecue fare is also easy. Potato soup, too. Chicken strips/tenders/fingers/whatever are easy, when the deep fryer is working. Chicken-fried steak is also good. I'm sure I'll come up with more later.

Going back to the original topic. If given a recipe and ingredients, I can fix the recipe fairly well, because I'm a stickler for directions and I know what tastes good. The down side though is I'm not much for experimenting, i.e. creating new things or changing up classics

My favorite dishes to cook are:

 

thai curry : Thai curry paste (I like yellow and red the best), cocunut milk, bamboo shoots, pineapple, various combinations of other ingredients (bell peppers, bean sprouts, etc.).

 

mapo-tofu: The main ingredients are tofu (soft works best) and chili black bean paste. Then I use asparagus or minced pork depending if I'm in vegetarian mode or. not, along with green onions, garlic, some hot peppers, with soya sauce and chicken broth

 

risotto: Arborio rice is the key here, regular long grain is passable but nowhere near as good, particularly in texture. The basic stuff is onions, garlic and olive oil, and other ingredients depend mostly on what I have around. Two basic arrangements I like are 1) olives, asparagus, and tomatoes 2) lemon and pine nuts, possibly with some asparagus or shrimp.

 

I also make a variety of pasta dishes, usually with either italian or indian flavours.

Since I haven't cooked real food in a long time, I... can pretty much only make really kickass ramen anymore. Lots of vegetables and messing with the seasoning. I make sodium taste delicious.

I'll handle most of the outside cooking on the grill, both at home, and at my parents house. I love making steak, chicken, and been told my porkchops are very good. As strange has it sounds, I suck at making hamburger patties.

I was afraid to admit it, but actually I can cook. Southern. Fried chicken, grits, chitlins, collard greens, sweet potato pie, as well as some more obscure dishes like fatback, snapping turtle, both mountain and prairie oysters, squirrel, and rabbit. Sausage gravy is my specialty.

I just randomly point to recipes when nothing sounds good. The quiche was a result of that. Helped me get over being finicky rather quickly. I try to do the random thing at libraries once a month as well.

I'm interested in how snapping turtles would taste.

 

And since it's southern, I'd assume it'd be deep-fried.

Very little. My girl can tear it up in the kitchen, though. I'd be tearing my hair out if we lived together, but I'd be too fat to continue it for long periods of time. I'll post some of her recipes later.
