I've never been a fan of potatoes. Ever. The only things I can eat are potato chips, fries, and wedges, and sometimes even the wedges are just too much potato for me. There have been times where i've eaten scalloped potatoes, but again, that is incredibly rare.

 

Is there anything i can do to make me actually like potatoes and stomach them? I'm an incredibly picky eater, especially with vegetables and am trying to expand my horizons.

Fried potatoes. That, plus beans, cornbread and ham makes a good dinner.

Cook some smaller, waxier potatoes, like fingerling taters. You probably just don't like all the starch. If you're frying or baking, use the big russets or other starchy spuds. With a roast or some meat, use the waxy small young ones.

 

Also, try baking potatoes on a heap of kosher salt, instead of wrapped in foil like your mom does. The skin will crisp up, and the inside moisture will draw out more, making them flakier and more tender, instead of the wet starchball with falling-off skin that the foil produces.

Mashed with tons of gravy. Or just gravy, in general, on any kid of potato rules. Miso gravy, especially.
